Elevate baked fish with zesty spices and a flavorful salsa.
Ingredients:
  • 1 cup Original Bisquick™ mix
  • 1/2 to 1 teaspoon salt, if desired
  • 1 teaspoon smoked Spanish paprika
  • 1/2 to 1 teaspoon chipotle chile powder
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/2 cup evaporated milk or 2 egg whites mixed with 2 teaspoons water
  • 6 tilapia fillets (1 1/2 lb)
  • Cooking Spray
  • 4 slices smoked thick-sliced bacon, crisply cooked, crumbled
  • 2 avocados, pitted, peeled and chopped
  • 2 cups diced seeded tomatoes (about 2 large)
  • 1/3 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1/4 teaspoon freshly ground pepper
Instructions:
  • Preheat the oven to 375°F and generously coat a 15x10x1-inch baking pan with cooking spray.
  • First, combine Bisquick mix, salt, paprika, chile powder, and lemon-pepper seasoning in a shallow dish. Next, pour evaporated milk into another shallow dish. Dip the fillets into the milk, then coat them with the seasoned Bisquick mixture (any excess mixture can be discarded). Finally, transfer the coated fillets to a baking dish and lightly spray the tops with cooking spray to keep them moist.
  • Bake the fish uncovered for 15 to 20 minutes or until it easily flakes with a fork. While the fish is baking, combine all salsa ingredients in a large bowl. Allow it to sit for 10 to 15 minutes, then stir well, taste, and adjust seasoning to your preference.
  • Plate the fish on warm serving dishes and generously spoon 1/2 cup of salsa over each fillet.
