Sassy Sugar Cinnamon Sweet Potato Fries with Creamy Coconut Maple Dipping Sauce

Irresistible sweet and savory fries paired with creamy coconut-maple dip.
Ingredients:
  • 2 sweet potatoes
  • 2 eggs
  • 2 tablespoons milk
  • 1 1/2 cups Original Bisquick™ mix
  • 1/3 cup cornstarch
  • 1/2 cup sugar
  • 1 1/2 teaspoons salt
  • 4 1/2 teaspoons ground cinnamon
  • 2 cups coconut oil (for frying)
  • 2 containers (6 oz each) Yoplait® Original 99% Fat Free coconut cream pie or French vanilla yogurt
  • 2 tablespoons real maple syrup
Instructions:
  • Peel sweet potatoes and slice into thin strips. In a large bowl, whisk together eggs and milk. Add sweet potato strips and mix until well coated.
  • Place Bisquick mix and cornstarch in a pie plate. In a small bowl, combine sugar, salt, and cinnamon. Add 2 tablespoons of the sugar-cinnamon mixture to the Bisquick mix; stir until combined. Reserve the remaining sugar-cinnamon mixture for later use.
  • Warm up the coconut oil in a 10-inch skillet on medium heat.
  • After dipping the sweet potatoes in the egg mixture, dredge them in the Bisquick mixture. Fry 15 to 20 strips of sweet potatoes in hot oil until they turn golden brown. Transfer the fries to a plate lined with napkins or paper towels. Sprinkle them with 1/2 tablespoon of the remaining sugar-cinnamon mixture. Continue frying the rest of the sweet potatoes, coating them with the sugar-cinnamon mixture as they come out of the oil.
  • In a medium serving bowl, spoon the yogurt and drizzle with maple syrup. Serve with hot fried sweet potatoes for dipping.
