Satay beef and choy sum stir-fry

Ingredients:
  • 266.00 gm jasmine rice
  • 36.40 gm peanut oil
  • 600g beef strips
  • 1 brown onion, halved, thinly sliced
  • 1 red capsicum, thinly sliced
  • 1 garlic clove, crushed
  • 1 bunch baby choy sum, trimmed, chopped
  • 65.00 gm crunchy peanut butter
  • 83.33 gm coconut cream
  • 44.00 gm sweet chilli sauce
  • 48.80 gm oyster sauce
  • 1 small red chilli, deseeded, sliced
Instructions:
  • Prepare the rice using the absorption method as directed on the packet.
  • Heat a wok over high heat until sizzling. Add 2 teaspoons of oil, swirl to coat the pan, and add half of the beef, stir-frying for 1 minute until just sealed. Transfer to a plate and repeat the process with the remaining beef.
  • Drizzle the remaining tablespoon of oil into the wok. Toss in the onion, capsicum, and garlic. Stir constantly for 2 minutes until the veggies are tender. Mix in the beef and its juices. Add the choy sum, peanut butter, coconut cream, sweet chilli sauce, and oyster sauce. Stir well for another 2 to 3 minutes until the choy sum is tender and everything is heated through.
  • Divide the rice among bowls, top with the flavorful stir-fry, sprinkle with spicy chili, and enjoy your delicious meal.
