Satisfying Eggnog

Light and traditional eggnog made with egg yolks, nutmeg, and vanilla, using nonfat milk and sugar substitute for a healthier twist.
Ingredients:
  • 6 cups nonfat milk
  • 1 (12 fluid ounce) can evaporated milk
  • 1 cup granular sucralose sweetener (such as Splenda®)
  • 1 teaspoon ground nutmeg
  • 5 egg yolks
  • 2 tablespoons vanilla extract
  • 1 cup dark rum, or to taste
Instructions:
  • In a heavy saucepan, combine nonfat milk, evaporated milk, sucralose sweetener, nutmeg, and egg yolks. Heat over very low heat, stirring constantly, until the mixture reaches 160 degrees F (70 degrees C), which should take around 10 minutes. Strain the eggnog, stir in vanilla extract, and refrigerate until chilled, approximately 2 hours.
  • For extra depth and flavor, gently swirl in a splash of dark rum right before serving, if desired.
