Slow-cooked pork chops in savory tomato sauce make a cozy family meal.
Ingredients:
  • 3 tablespoons olive oil
  • 5 boneless pork chops, trimmed
  • 1 onion, sliced
  • 2 green bell peppers, sliced
  • 1 (8 ounce) can tomato sauce
  • 0.25 cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons Worcestershire sauce
  • 1.5 teaspoons salt
  • 2 tablespoons cornstarch
Instructions:
  • In a generous amount of olive oil, sear pork chops until beautifully browned on both sides for about 5 minutes each. Place the seared chops in a slow cooker and garnish with onion and green peppers.
  • Combine tomato sauce, brown sugar, vinegar, Worcestershire sauce, and salt in a bowl and whisk until well blended. Pour the sauce into the slow cooker, gently stirring to evenly coat the meat and veggies.
  • Slow cook pork chops on Low until they are tender, for 6 to 8 hours.
  • Place the pork chops on a serving platter and cover them with aluminum foil to keep them warm. Thicken the sauce by whisking in cornstarch, then generously pour the sauce and vegetables over the pork chops.
