Savory casserole combines crispy bacon, onions, egg noodles, sauerkraut, and a hint of mushroom for a delicious twist.
Ingredients:
  • 1 (8 ounce) package egg noodles
  • 10 slices bacon, chopped
  • 1 (14 ounce) can sauerkraut, drained
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 0.25 cup milk, or more to taste
  • salt and ground black pepper to taste
Instructions:
  • Fill a large pot with lightly salted water and bring it to a roaring boil. Add noodles and bring back to a boil. Cook uncovered, stirring occasionally, until noodles are just al dente, about 6 minutes.
  • In a large skillet, cook bacon over medium-high heat until just crispy and fat is rendered, about 6 to 7 minutes. Reserve 3 tablespoons of bacon fat in the pan, then drain bacon on paper towels.
  • Drain the noodles. Sauté the onion in the skillet until softened, about 4 to 5 minutes. Add the noodles and toss to coat.
  • Pour the noodle mixture into a casserole dish, then add sauerkraut, bacon, and mushroom soup. Fill the empty soup can with milk, shake, and pour into the dish. Mix everything together, then season with salt and pepper.
  • Bake in the hot oven until bubbly and warmed through, for 20 to 30 minutes.
