Budget-friendly sausage casserole bursting with flavor and ready in no time!
Ingredients:
  • 800g chat (small coliban) potatoes, halved
  • 2 (about 180g each) baby fennel, trimmed, halved lengthways
  • 20.00 ml coarsely chopped fresh rosemary
  • 60ml (1/4 cup) fresh lemon juice
  • 18.20 gm olive oil
  • 8 (about 375g) lean Italian sausages
  • 2 sprigs fresh rosemary
Instructions:
  • Preheat the oven to 220°C. Combine potatoes, fennel, and rosemary in a baking dish. Drizzle with lemon juice and oil, then season with salt and pepper. Mix well to coat evenly.
  • Place the sausages and fresh rosemary in the dish. Roast in the oven, flipping the sausages halfway through, until golden brown, about 25 minutes.
