Cheesy stuffed acorn squash with savory meats, onions, and garlic. Pair with salad and crusty bread for a delicious, easy dinner.
Ingredients:
  • 1 acorn squash, halved lengthwise and seeded
  • salt and freshly ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 0.25 pound lean ground beef
  • 0.25 pound ground pork sausage
  • 1 small onion, chopped
  • 2 ounces Cheddar cheese, cubed
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Season the squash flesh with a sprinkle of salt and pepper, then give it a light mist of cooking spray. Arrange the squash cut-sides down in a microwave-safe dish and cover with plastic wrap.
  • Microwave on high until the flesh is soft and easily pierced with a fork, approximately 10 to 15 minutes.
  • Prepare the filling by heating oil in a skillet over medium-high heat. Cook a mix of ground beef and pork sausage, stirring occasionally until golden brown and crumbly, for about 7 to 9 minutes. Remove excess grease from the skillet and transfer the meat to a bowl.
  • Sauté onion and garlic in the delicious skillet juices until onion is translucent, approximately 5 minutes. Take the skillet off the heat.
  • Combine the onion mixture with the meat mixture, then fold in the Cheddar cheese.
  • Arrange the squash halves on a baking sheet with the cut-sides facing up. Fill the cavities with the delicious filling.
  • Bake in a hot oven until the cheese is melted and the squash is lightly browned, about 15 to 20 minutes.
  • Take out of the oven and generously season with salt and pepper before serving while hot.
