Savory Italian sausage and farro skillet with mushrooms, winter squash, and veggies. Versatile and delicious one-pan meal.
Ingredients:
  • 2 mild Italian sausages
  • 0.5 red onion, sliced
  • 0.5 delicata squash - halved lenghwise, seeded, and cut into thin slices
  • 1 cup frozen mixed mushrooms
  • 1 cup vegetable broth
  • 0.5 cup quick-cooking farro
  • 2 tablespoons hot water, or as needed
  • 0.25 cup grated Pecorino Romano cheese
Instructions:
  • In a large skillet over medium-high heat, heat olive oil. Add sausage, onion, and squash. Sauté until onion and squash are slightly softened and sausages are browned on one side, about 5 minutes. Flip sausages, then add frozen mushrooms and continue cooking until mushrooms have thawed, about 3 minutes.
  • Combine vegetable broth and farro in a pot, bringing it to a lively boil. Lower the heat and let it simmer until the farro is tender and the sausage is fully cooked, typically taking 10 to 15 minutes. Add hot water as necessary to maintain a moist consistency.
  • Reduce heat and gently incorporate the savory Pecorino Romano cheese. Season with a sprinkle of salt and pepper, then savor promptly.
