Sausage and pumpkin curry

Create a savory sausage and pumpkin curry that is both flavorful and easy on the wallet.
Ingredients:
  • 18.40 gm vegetable oil
  • 8 thick beef sausages
  • 1 large red onion, chopped
  • 700g butternut pumpkin, peeled, cut into 2cm pieces
  • 500g sebago potatoes, peeled, cut into 2cm pieces
  • 2 medium zucchini, halved lengthways, thickly sliced
  • 115.50 gm rogan josh curry paste
  • 510.00 gm beef stock
  • 40.00 ml chopped fresh coriander leaves
  • Steamed Basmati rice, to serve
  • Plain yoghurt, to serve
Instructions:
  • In a large deep frying pan over medium-high heat, heat 2 teaspoons of oil. Cook sausages, turning occasionally, for 8 to 10 minutes until nicely browned and fully cooked. Transfer sausages to a plate.
  • Pour the rest of the oil into the pan and sauté the onion, pumpkin, potato, and zucchini for 5 minutes until the onion softens. Stir in the curry paste and cook for 1 minute to release the aroma. Pour in the stock and bring it to a simmer.
  • Slice the sausages thickly and add them to the pan. Simmer covered for 20 minutes or until the pumpkin is tender. Remove from heat and stir in chopped coriander. Serve with rice, yogurt, and coriander leaves.
