Savory Italian hand-pies filled with sausage, ricotta, Parmesan, and veggies - a crowd-pleasing freezer essential to skip takeout cravings.
Ingredients:
  • 3 lb homemade pizza dough or store-bought dough for 3 pizzas
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 package (8 oz) sliced fresh mushrooms (about 3 cups)
  • 2 cups fresh spinach leaves
  • 1 cup chopped cooked sausage
  • 1 container (15 oz) ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon pepper
Instructions:
  • Preheat your oven to 450°F. Divide the pizza dough into 8 pieces and roll each piece into an 8-inch round disk.
  • In a large skillet over medium to medium-high heat, sauté onion and mushrooms in oil for 5 to 7 minutes until softened. Stir in spinach and cook for an additional 2 minutes until wilted. Remove skillet from heat and set aside.
  • Combine the cooked sausage, ricotta cheese, Parmesan cheese, salt, nutmeg, pepper, and onion-spinach mixture in a large bowl.
  • Place a generous amount of filling in the center of each dough round. Be sure not to overfill the dough. Fold the dough over the filling, pressing the edges together and twisting to seal securely. Transfer the calzone onto an ungreased cookie sheet for baking.
  • Bake for 15 to 20 minutes until beautifully golden brown. Slice calzones in half before serving.
