Spinach, Ricotta and Sausage Calzones

Freezer-friendly calzones for a quick and customizable meal - bake as many as you like at a time!
Ingredients:
  • 1 box (9 oz) frozen chopped spinach
  • 1/2 lb ground Italian sausage, browned and drained
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 16 oz refrigerated pizza dough
  • 1 egg, slightly beaten
  • Pizza sauce or marinara sauce, if desired
Instructions:
  • Preheat oven to 375°F and grease a cookie sheet with cooking spray.
  • Prepare the spinach according to the package instructions and let it cool slightly. Squeeze out any excess moisture using paper towels. Transfer the spinach to a large bowl and mix in the sausage, ricotta, mozzarella, 3 tablespoons of Parmesan, and Italian seasoning until thoroughly combined.
  • Divide the pizza dough into 8 balls, then shape and press each ball into a 5 to 6-inch circle. Spoon the meat mixture onto one half of each circle, making sure to leave a 1/2-inch border. Gently fold the dough over the filling and seal the edges by pinching and rolling.
  • Place the calzones on a baking sheet. Brush the tops of the calzones with a whisked egg and gently prick the tops with a fork to ensure steam can escape while baking.
  • Bake for 20-22 minutes until dough is golden brown, then sprinkle with remaining 1 tablespoon Parmesan cheese for the last 3 minutes of baking. Let cool for 10 minutes on the cookie sheet before serving warm with pizza sauce.
  • For freezing: Proceed with the recipe until step 3. Place the calzones on a cookie sheet and freeze for about 4 hours until they are firm. Transfer the frozen calzones into a resealable plastic freezer bag and store in the freezer. When you're ready to cook, lay the calzones on a cookie sheet and brush them with egg. Bake for 25 to 30 minutes until the dough is golden brown, then sprinkle the remaining 1 tablespoon of Parmesan on top during the last 3 minutes of baking. Serve with pizza sauce.
