Sausage, Spinach, and Ricotta Calzone

Delicious calzone with creamy ricotta, flavorful Italian sausage, and nutritious spinach.
Ingredients:
  • 1.5 cups all-purpose flour, or more if needed
  • 1 envelope Fleischmann's® Pizza Crust Yeast
  • 1 teaspoon sugar
  • 0.75 teaspoon salt
  • 0.66666668653488 cup very warm water (120 degrees F to 130 degrees F)
  • 1 tablespoon vegetable oil
  • 8 ounces Italian sausage
  • 2 cups fresh spinach leaves
  • 0.25 cup water
  • 0.75 cup ricotta cheese
  • 0.75 cup shredded mozzarella cheese
  • 1 large egg
  • 1 teaspoon Spice Islands® Italian Herb Seasoning
  • 0.5 teaspoon Spice Islands® Crushed Red Pepper
  • 0.5 teaspoon Spice Islands® Garlic Salt
  • 2 cups pizza sauce, for dipping
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Prepare the dough by mixing 1 cup of flour, yeast, sugar, and salt in a large bowl. Pour in very warm water and oil and mix until well combined for about 1 minute. Slowly incorporate the remaining flour until a soft, slightly sticky dough forms. Knead on a floured surface until smooth and elastic, adding more flour if necessary, for about 4 minutes. Cover and allow the dough to rest on the floured surface.
  • Once the dough is resting, prepare the filling by browning the sausage in a large skillet over medium-high heat until crumbly and golden, this should take about 5 to 7 minutes. Use a slotted spoon to transfer the cooked sausage to a paper towel-lined plate to drain. Discard the grease from the skillet. Add the spinach and water to the skillet and sauté over medium heat until the spinach is wilted, usually 1 to 2 minutes; make sure to drain any excess liquid. Now, return the cooked sausage to the skillet with the spinach. Set the skillet aside for later use.
  • In a mixing bowl, blend together the ricotta, mozzarella, and egg until well combined. Add Italian seasoning, crushed red pepper, and garlic salt, and mix thoroughly. Let it sit while you prepare the rest of the recipe.
  • Divide the dough into 4 equal pieces and roll out one piece into an 8-inch circle on a floured surface. Spread about 1/3 cup of ricotta mixture over the bottom half of the dough, leaving a 1/2-inch border. Add a generous 1/3 cup of sausage-spinach mixture on top. Fold the top half of the dough over the filling, then seal the edges by folding and pressing them together. Place on a greased baking sheet, make 3 to 4 vents on top, and repeat with the remaining dough.
  • Bake in the preheated oven for 15 to 20 minutes until lightly browned. Then cool slightly on a wire rack to maintain a crispy bottom crust. Serve with pizza sauce for dipping.
