Prepare this delicious make-ahead casserole with low-fat ingredients like cottage cheese, egg substitute, and lean sausage for a tasty and convenient breakfast dish that will impress your guests.
Ingredients:
  • 0.75 pound ground pork sausage
  • 4 green onions, chopped
  • 0.5 pound fresh mushrooms, sliced
  • 10 eggs, beaten
  • 1 (16 ounce) container low-fat cottage cheese
  • 1 pound Monterey Jack cheese, shredded
  • 2 (4 ounce) cans diced green chile peppers, drained
  • 1 cup all-purpose flour
  • 0.5 teaspoon salt
  • 0.33333334326744 cup butter, melted
Instructions:
  • In a large skillet, brown the sausage over medium-high heat until cooked through. Drain and set aside. In the same skillet, melt butter and sauté green onions and mushrooms until tender.
  • Combine eggs, cottage cheese, Monterey Jack cheese, and chiles in a large bowl. Add sausage, green onions, and mushrooms. Cover and chill in the fridge overnight.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish.
  • Combine the sifted flour, baking powder, and salt in a bowl. Incorporate the melted butter into the mixture. Gently fold the flour mixture into the egg mixture. Transfer the batter into the greased baking dish.
  • Bake in a preheated oven for 40 to 50 minutes until lightly browned. Allow to stand for 10 minutes before serving.
