Try a one-pot BBQ sausage dish for a convenient and delicious meal.
Ingredients:
  • 4.60 gm olive oil
  • 650g beef sausage
  • 1 medium brown onion, thinly sliced
  • 200g cup mushrooms, quartered
  • 175g rindless shortcut bacon, sliced
  • 400g can diced tomatoes
  • 40.00 ml chopped flat-leaf parsley leaves
  • 8 slices ciabatta bread
Instructions:
  • In a large frying pan over medium heat, heat oil. Add sausages and cook, turning occasionally, for 10 to 12 minutes until cooked through. Transfer sausages to a large plate, cover to keep warm, and carefully drain excess oil from the pan.
  • Place the pan back over medium heat. Add the onion, mushrooms, and bacon. Cook while stirring for 5 minutes, or until the onion is soft.
  • Slice sausages thickly and add them back to the pan with tomatoes. Bring to a boil, create 4 indentations in the mixture, gently crack an egg into each hollow. Lower the heat, cover, and cook for 4 to 5 minutes until eggs are cooked to your desired doneness.
  • Garnish with fresh parsley and accompany with crusty bread.
