Whip up a flavorful bean and sausage stew with a colorful veggie garnish for a delicious and satisfying lunch!
Ingredients:
  • 36.40 gm olive oil
  • 500g thick beef sausages
  • 1 large brown onion, halved, sliced
  • 2 garlic cloves, crushed
  • 1 green capsicum, roughly chopped
  • 1 red capsicum, roughly chopped
  • 3 stalks celery, roughly chopped
  • 500g roma tomatoes, chopped
  • 400g can cannellini beans, drained, rinsed
  • 200g baby rocket leaves
  • crusty bread, to serve
Instructions:
  • In a large, heavy-based frying pan over medium heat, heat 1 tablespoon of oil. Add sausages and cook for 5 minutes, turning occasionally until browned. Transfer to a chopping board and slice thickly.
  • In the same pan, sauté onion, garlic, and capsicum in the remaining oil until the capsicum is tender, about 5 minutes, stirring occasionally.
  • Combine celery, tomatoes, and sausages in a pot and simmer covered for 15 minutes until the celery is tender. Stir in beans and cook for an additional 2 minutes until heated through. Serve the stew in bowls, top with fresh rocket, and enjoy with crusty bread.
