Delicious and aromatic vegetable hotpot, perfect for quick weeknight dinners.
Ingredients:
  • 1 large onion, chopped
  • 1 chorizo, sliced
  • 400g can chickpeas, rinsed and drained
  • 7.50 gm ground cumin
  • 3 tsp ground coriander
  • 3cm piece ginger, finely shredded
  • 1 carrot, chopped
  • 2 zucchini, sliced
  • 450g pumpkin, peeled and cut into small chunks
  • 500g mushroom sauce
  • 125ml water
  • 8 fresh dates, halved and pitted
Instructions:
  • Preheat the oven to 180°C. In a large pan, heat oil and sauté onion and chorizo until golden, about 3-4 minutes. Add chickpeas, spices, and ginger, and cook for an additional minute.
  • Combine carrots, zucchini, and pumpkin in the spice mixture, ensuring they are evenly coated. Pour in the sauce and water or stock. Transfer the mixture to an ovenproof casserole dish, cover, and bake for 1 hour.
  • Uncover and delicately fold in the dates. Cover and bake for an additional 30 minutes. Serve hot.
