Try this delicious brunch egg bake with sausage, cheese, and a delightful cranberry twist - a crowd favorite!
Ingredients:
  • 1 1/2 lb bulk pork sausage
  • 10 English muffins, diced (about 12 cups)
  • 4 medium green onions, sliced (1/4 cup)
  • 1 cup sweetened dried cranberries
  • 8 eggs
  • 1 1/2 cups milk
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups shredded Monterey Jack cheese (12 oz)
Instructions:
  • Prepare a 13x9-inch (3-quart) glass baking dish by spraying it with cooking spray. In a 12-inch skillet, sauté the sausage over medium heat for 8 to 10 minutes, stirring occasionally, until cooked through; then drain the excess fat.
  • Layer half of the diced muffins at the bottom of the pan, followed by half of the sausage, onions, and cranberries. Repeat with the remaining half of the ingredients to create another layer of delicious flavors.
  • In a large bowl, whisk together eggs, milk, sour cream, salt, and pepper until fully combined. Pour this mixture over the ingredients in the pan. Sprinkle cheese on top. Cover the pan with a foil sheet sprayed with cooking spray, then refrigerate for at least 4 hours, but no more than 24 hours.
  • Preheat oven to 325°F. Bake covered for 30 minutes, then uncover and continue baking for an additional 30-40 minutes until the top is golden brown and a knife inserted in the center comes out clean. Cut into squares to serve.
