Savory sausage-filled squash, a delicious must-have for Thanksgiving or any time of year.
Ingredients:
  • 2 acorn squash, halved and seeded
  • 1 pound ground sausage
  • 1 cup chopped celery
  • 0.5 cup chopped mushrooms
  • 0.25 cup chopped onion
  • 1 large egg, beaten
  • 0.5 cup sour cream
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and cover a baking sheet with shiny aluminum foil.
  • Lay the squash halves, cut-side down, on the baking sheet.
  • Roast in the preheated oven until tender for about 1 hour. Then, flip the squash halves over and let them cool while keeping the oven on.
  • In a large skillet over medium-high heat, brown and crumble the sausage for 5 to 7 minutes; drain any excess grease. Add celery, mushrooms, and onion; cook until celery is softened, about 5 to 10 minutes. Remove from heat.
  • In a large bowl, whisk the egg and mix in the sour cream and Parmesan cheese. Combine the cheese mixture with the sausage mixture, then fill the squash halves with the mixture.
  • Continue baking until the filling is fully cooked, approximately 20 minutes.
