Ingredients:
  • 4 tomatoes, halved
  • Olive oil cooking spray
  • 1kg parsnips, peeled, coarsley chopped
  • 63.13 gm cream
  • 8 thick beef sausages
  • 40g butter
  • 2 red onions, halved, thinly sliced
  • 45.00 gm brown sugar
  • 62.50 ml balsamic vinegar
Instructions:
  • Caramelize onions: Melt butter in a skillet over medium heat. Add onions and cook, stirring occasionally, for 15 minutes until soft and golden. Stir in sugar and vinegar and continue cooking for 10 minutes until onions are caramelized. Remove from heat and let cool.
  • Heat a barbecue plate or frying pan over medium heat. Coat the cut sides of tomatoes with oil and season with salt and pepper. Place the tomatoes cut-side down on the barbecue or frying pan. Cook for 10 minutes until slightly charred and heated through. Transfer the tomatoes to a plate and cover.
  • While the parsnips are cooking in boiling salted water for 25 minutes or until tender, drain and roughly mash them. Then, add cream, salt, and pepper, and stir vigorously with a wooden spoon until smooth.
  • Cook sausages until golden brown and cooked through, turning occasionally for about 8 minutes. Transfer to a plate and cover to keep warm.
  • Plate the parsnip mash and tomatoes, then layer with sausages and caramelized onions before serving.
