Sauteed white beans & Brussels sprouts

Flavorful white bean and Brussels sprout salad.
Ingredients:
  • 100g pancetta or bacon, chopped
  • 2 cloves garlic, chopped
  • 250g brussels sprouts, trimmed, halved
  • 400g can cannellini beans, rinsed and drained
Instructions:
  • In a large frying pan over high heat, sizzle pancetta until crispy for 3 mins. Toss in garlic and cook until aromatic for 1 min. Add brussels sprouts and sauté until vibrant for 3 mins.
  • Stir in cannellini beans and pour in 1/2 cup of water. Cook on high heat, stirring occasionally, until sprouts are tender, about 3-5 minutes.
