Savory Southern green beans with potatoes, buttery sautéed onions, crispy bacon, and tangy white balsamic vinegar.
Ingredients:
  • 6 slices bacon, chopped
  • 3 tablespoons butter
  • 1 red onion, chopped
  • 2 pounds fresh green beans, trimmed and snapped
  • 8 small new potatoes, diced
  • 1 large clove garlic, minced
  • 0.25 cup chicken broth
  • 1.5 teaspoons white balsamic vinegar
  • salt and pepper to taste
Instructions:
  • Fry chopped bacon in a skillet over medium heat, stirring occasionally, until crispy and golden, for 8 to 10 minutes. Place the cooked bacon on a paper towel-lined plate to drain.
  • In a skillet over medium-low heat, melt butter with a lid. Sauté onion until translucent, for approximately 5 minutes. Add cooked bacon, green beans, potatoes, garlic, and chicken broth. Cover and simmer until green beans are tender, about 10 minutes.
  • Season with a drizzle of vinegar, a pinch of salt, and a dash of pepper; serve.
