Southern-style green beans with flavorful juices, perfect for dunking cornbread.
Ingredients:
  • 6 slices bacon, sliced crosswise into 1/2-inch pieces
  • 1 onion, sliced lengthwise
  • 0.25 cup tomato sauce
  • 2 pounds fresh green beans, trimmed
  • 3 cups chicken broth
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • Place a saucepan over medium heat. Cook and stir bacon until almost crisp, about 6 minutes. Add onion and cook until onion is soft and golden brown, about 5 minutes, dissolving any browned bits on the bottom of the pan. Stir in garlic and tomato sauce, cooking until garlic has softened, about 1 minute more.
  • In a skillet, combine green beans with chicken broth. Increase heat to high and season with salt, black pepper, and cayenne pepper. Bring to a simmer until beans start to soften. Reduce heat to medium-low and simmer for 1 1/2 hours, stirring occasionally. Add additional broth or water if needed.
  • Season with salt, black pepper, and cayenne pepper to your liking. Simmer until the beans are soft and tender, approximately 30 minutes more. Serve the beans on a deep platter with some cooking juices.
