Savory bacon and fresh green beans with potatoes and onions, ideal for enjoying seasonal produce.
Ingredients:
  • 0.5 pound applewood-smoked bacon
  • 0.5 large white onion, sliced lengthwise
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 pounds fresh green beans, trimmed
  • 2 pounds red potatoes, cut into chunks
Instructions:
  • Cook the bacon in a large Dutch oven over medium-high heat until evenly browned, about 10 minutes. Transfer the bacon to a paper towel-lined plate, keeping some drippings in the Dutch oven.
  • Cook the onion in the delicious drippings until nicely browned, for about 10 minutes. Add the garlic to the onion and cook until softened, about 1 to 2 minutes. Pour the broth into the Dutch oven, then add the green beans. Chop the bacon and toss it in the Dutch oven.
  • - Bring the broth to a boil, then lower the heat and cover the Dutch oven. Simmer the green beans until tender, approximately 1 hour. Add potatoes, season with salt and pepper, and cook until tender, about 30 more minutes.
