Indulge in Greek pita breads stuffed with tender slow-cooked lamb or fresh salad.
Ingredients:
  • 1 tsp dried yeast
  • 5.00 gm caster sugar
  • 125.00 gm warm water
  • 375.00 ml plain flour
  • 2.40 gm salt
  • 4.60 gm extra virgin olive oil
  • Plain flour, for dusting
Instructions:
  • In a small bowl, mix yeast and sugar, then add warm water and whisk until yeast is dissolved. Cover and let sit in a warm place for 10 minutes, or until frothy.
  • In a large bowl, gently sift flour and salt. Pour in the yeast mixture and oil. Use a butter knife to mix until a rough dough comes together. Transfer the dough onto a floured surface and knead for 5 minutes until it becomes smooth and elastic.
  • Transfer the dough into a generously oiled large bowl and cover it. Allow it to rise in a warm spot for 1 hour and 30 minutes, or until it doubles in size.
  • Preheat the oven to 230°C/210°C fan-forced. Deflate the dough. Transfer it onto a floured surface and divide it into 4 equal portions. Roll out one portion into a 16cm round using a lightly floured rolling pin.
  • Preheat oven with baking tray or pizza stone inside for 10 minutes. Place 1 dough round on the hot tray and bake for about 3 minutes until golden and puffed. Remove from oven and wrap in a clean tea towel to keep warm. Repeat with remaining dough rounds. Serve with Greek salad.
