Slow-Cooker Teriyaki Chicken

Easy slow-cooker teriyaki chicken with a twist - sweet pineapple and fresh green onions for a delicious upgrade to a classic dish.
Ingredients:
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1/3 cup soy sauce
  • 1/4 cup packed brown sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon ground gingerroot
  • 4 cloves garlic, finely chopped
  • 2 packages (20 oz each) boneless skinless chicken thighs
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • 2 cups chopped fresh pineapple
  • 1/4 cup sliced green onions (about 4)
  • 4 cups hot cooked white rice
  • 1/4 cup chopped fresh cilantro leaves
  • 1 lime, cut into wedges
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Then, mix together broth, soy sauce, brown sugar, melted butter, gingerroot, and garlic in the cooker. Add the chicken and coat it with the mixture. Cover and cook on Low heat for 2 to 3 hours until the chicken reaches an internal temperature of at least 165°F.
  • In a small bowl, whisk together cornstarch and cold water. Add the mixture to the chicken in the slow cooker and cover. Cook on high for 5 to 10 minutes until it thickens. Mix in pineapple and green onions.
  • Scoop rice into 8 bowls. Spoon chicken mixture over the rice. Sprinkle with cilantro and serve with lime wedges.
