Prep dinner in the morning for a delicious sandwich at night.
Ingredients:
  • 3 lb boneless skinless chicken thighs
  • 1/2 cup teriyaki sauce
  • 1 tablespoon finely chopped gingerroot
  • 4 cloves garlic, finely chopped
  • 1 tablespoon sesame seed
  • 1 teaspoon toasted sesame oil
  • 1/2 cup hoisin sauce
  • 12 flour tortillas (10 inch)
  • 3/4 cup shredded carrots
  • 1 medium bell pepper, cut into bite-size strips
  • 1/2 cup sliced green onions (8 medium)
  • 3/4 cup chow mein noodles
Instructions:
  • 1. Grease a 4- to 5-quart slow cooker with cooking spray. Add chicken to the cooker and pour a mixture of teriyaki sauce, gingerroot, and garlic over the chicken.
  • Cover the pot and simmer gently over Low heat for 7 to 8 hours.
  • Mix the chicken mixture until large pieces break apart. Add sesame seeds and sesame oil. Turn up the heat to High, cover, and cook for approximately 15 minutes until fully heated.
  • Spread a generous layer of flavorful hoisin sauce on each tortilla, then heap a generous portion of the savory chicken mixture down the center. Top it off with a colorful array of shredded carrot, bell pepper strips, green onions, and a sprinkle of noodles. Roll up the tortilla and cut it diagonally in half for a visually appealing presentation.
