Slow-cook chicken in teriyaki sauce for tender and flavorful pulled chicken, great for pairing with rice, vegetables, or a bun.
Ingredients:
  • 4 medium skinless, boneless chicken breasts
  • 2 medium skinless, boneless chicken thighs
  • 0.25 cup reduced-sodium tamari or low-sodium soy sauce
  • 0.25 cup honey
  • 2 cloves garlic, minced
  • 2 tablespoons minced fresh ginger root
  • 1 tablespoon rice vinegar
  • 2 tablespoons tapioca flour (starch)
  • 2 tablespoons water
Instructions:
  • Mix chicken, soy sauce, honey, garlic, ginger, and rice vinegar in a slow cooker.
  • Slow cook the chicken until it's fully cooked and no longer pink in the center, on Low for 6 to 8 hours or High for 4 to 6 hours. Then, transfer the cooked chicken to a cutting board and shred it using two forks.
  • Transfer the flavorful liquid from the slow cooker to a saucepan and gently warm it. Combine tapioca flour and water in a bowl to make a slurry, then incorporate it into the warm liquid. Cook until the sauce reaches your preferred thickness, around 3 to 5 minutes of simmering.
  • Coat tender pulled chicken with the luscious sauce, ensuring each piece is fully enveloped.
