One-skillet, five-ingredient dinner serves four!
Ingredients:
  • 1 lb boneless skinless chicken breast halves, cut into 1-inch pieces
  • 1 1/2 cups sliced fresh mushrooms (4 oz)
  • 1 cup baby-cut carrots
  • 1 2/3 cups water
  • 1 package (4.3 oz) long grain and wild rice mix with herbs
Instructions:
  • Preheat a 10-inch nonstick skillet over medium heat. Sauté chicken for about 5 minutes, stirring occasionally, until fully cooked. Add all remaining ingredients, including the seasonings from the rice mix, and mix well.
  • Bring the mixture to a boil, then let it simmer on low heat for 15 minutes. Remove the cover and continue simmering for about 3 more minutes, stirring occasionally, until the carrots are tender and the liquid is absorbed.
