Chef John creates aromatic coconut jasmine rice with ginger, turmeric, and chili flakes, perfect for pairing with zesty grilled meats.
Ingredients:
  • 1.5 cups jasmine or long-grain white rice
  • 1 teaspoon finely grated fresh ginger
  • 0.5 teaspoon red chili flakes
  • 0.25 teaspoon ground turmeric
  • 1 teaspoon kosher salt
  • 1 cup water
  • 1 (14 ounce) can coconut milk (not coconut cream)
  • 1 bay leaf
  • 0.25 cup toasted coconut for garnish
Instructions:
  • In a sturdy saucepan, combine rice with freshly grated ginger, kosher salt, red chili flakes, and turmeric. Pour in water and coconut milk, then whisk until well mixed (avoid stirring again).
  • Heat pan over medium-high heat until simmering. Once mixture bubbles and simmers gently, add bay leaf, cover tightly, and lower heat. Simmer over low heat for 18 minutes without uncovering. Remove from heat and let rest for 5 minutes, covered, then fluff rice with a fork.
