Try these savory satay brown rice bliss balls - spiced and coconut coated perfection that will leave you craving more!
Ingredients:
  • 200g (1 cup) brown rice
  • 70g (2/3 cup) desiccated coconut
  • 8.40 gm coconut oil
  • 3 green shallots, finely chopped
  • 1/2 tsp turmeric
  • 1/2 tsp dried chilli flakes
  • 90g (1/3 cup) natural peanut butter
  • 31.50 gm soy sauce
  • 82.50 ml fresh coriander leaves
Instructions:
  • Boil rice in a large saucepan for 25 minutes until tender. Drain and let cool briefly.
  • Toast the coconut in a frying pan over medium heat, stirring frequently, until it turns light golden, about 2-3 minutes. Transfer to a shallow bowl to cool. Clean the frying pan with a paper towel.
  • 1. Heat oil in a frying pan over medium heat until shimmering. Add shallot, turmeric, and chili flakes. Stir and cook for 1 minute until fragrant. Stir in peanut butter and soy sauce until well combined. Allow to cool slightly before using.
  • Blend the peanut butter mixture, coriander, half of the rice, and 1/4 cup of toasted coconut until fully incorporated. Transfer the mixture to a bowl and fold in the remaining rice. Add seasoning to taste.
  • Take heaping spoonfuls of the mixture and shape them into balls. Coat the balls by rolling them in the remaining toasted coconut. Keep the balls in a sealed container in the refrigerator for up to 3 days.
