Creates deliciously exotic pan-fried chicken with satay-inspired marinade of peanut butter, lemon juice, and brown sugar.
Ingredients:
  • 2 lemons, juiced
  • 1 tablespoon peanut butter
  • 1 tablespoon tomato puree
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon crushed red pepper flakes
  • 1 teaspoon crushed garlic
  • 6 skinless, boneless chicken breast halves
Instructions:
  • Combine lemon juice, peanut butter, tomato puree, brown sugar, Worcestershire sauce, salt, black pepper, crushed red pepper flakes, and garlic in a large bowl, stirring until smooth.
  • Flatten the chicken breasts to 1/2 inch thickness using a meat pounder. Coat the chicken evenly in the marinade, cover with plastic wrap, and refrigerate for at least 30 minutes, preferably longer.
  • In a hot, oiled skillet, sear chicken breasts from the marinade until golden brown and cooked through, about 6 to 8 minutes per side. The sticky marinade will caramelize, enhancing the flavor with a touch of char.
