Satay pork skewers

Ingredients:
  • 7.00 gm green curry paste
  • 80ml soy sauce
  • 16.00 gm brown sugar
  • 500g stir-fry pork strips
  • 18.40 gm oil
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 2cm piece ginger, peeled and finely grated
  • 270ml can light coconut milk
  • 70g peanut butter
  • 2.50 gm curry powder
  • 1 small red chilli, sliced
  • 21.00 gm soy sauce
  • 8.00 gm brown sugar
Instructions:
  • Submerge 24cm x 20cm bamboo skewers in cold water and let sit for 30 minutes.
  • Mix together the curry paste, garlic, soy sauce, sugar, and pork in a ceramic bowl. Let it chill in the refrigerator for 30 minutes.
  • In a saucepan over medium-high heat, sizzle the oil, onion, garlic, and ginger for 3-4 minutes to create a flavorful sauce.
  • Combine coconut milk, peanut butter, curry powder, chili, soy sauce, and sugar in a pot. Simmer for 5 minutes, then let it sit to thicken.
  • Skewer the pork and cook on a lightly greased chargrill pan over medium heat in batches for 2-3 minutes on each side, or until fully cooked.
  • Present the satay sauce alongside the skewers and lime wedges for a delightful touch!
