Savory Coconut Rice

Prepare Indian coconut rice with shredded coconut, coconut oil, and coconut water. Pair with curry of choice.
Ingredients:
  • 3 tablespoons coconut oil (for vegan option), ghee , or clarified butter
  • 1 cup finely chopped onion
  • 1 clove garlic, minced (1 teaspoon)
  • 1/8 teaspoon cayenne
  • 1 teaspoon kosher salt
  • 2 cups basmati long grain rice
  • 1/2 cup grated, unsweetened coconut
  • 2 cups unsweetened coconut water (See recipe note)
  • 1 3/4 cups plain water
  • 3 cardamom pods
  • 5 whole cloves
  • 1 stick cinnamon
Instructions:
  • Heat coconut oil, ghee, or clarified butter in a medium sauté pan. Cook onions until golden for 8 to 10 minutes. Stir in garlic, cayenne, and salt, cooking for an additional minute.
  • Incorporate the rice: Mix the rice into the onion mixture until well-coated with oil or butter, and sauté for an additional 3 minutes, stirring occasionally.
  • Combine grated coconut, coconut water, and water with rice mixture. Mix in cardamom pods, cloves, and cinnamon. Bring to a simmer over high heat, then reduce to low. Cover and gently simmer for 15 minutes.
  • Take the pot off the heat and allow the rice to steam, covered, for an additional 10 minutes.
  • Discard cardamom pods, cloves, and cinnamon, then fluff with a fork.
