Spicy Southwestern waffles with corn and green chiles - a versatile savory delight for any meal!
Ingredients:
  • 2 eggs, separated
  • 1.75 cups warm milk
  • 0.33333334326744 cup butter, melted
  • 2 tablespoons honey
  • 1.25 cups cornmeal
  • 1 cup all-purpose flour
  • 4 teaspoons baking powder
  • 0.5 cup corn
  • 2 green chile peppers, seeded and minced, or more to taste
Instructions:
  • Preheat waffle iron following the manufacturer's guidelines.
  • Whip egg whites in a large bowl until airy. Gently combine milk, butter, and honey. Mix in cornmeal, flour, baking powder, and salt until smooth. Gently fold in corn and green chile peppers.
  • Place a generous amount of batter onto the waffle iron and cook until beautifully golden brown and crisp, or until the waffle iron stops steaming, which should take about 3 to 4 minutes. Continue the process with the rest of the batter.
