Indulge in a delightful sweet potato dish with a delectable buttery crumble for a perfect harmony of flavors and textures.
Ingredients:
  • 3 tablespoons olive oil
  • 2 medium sweet potatoes, peeled and cut into 1/4-inch slices (about 12 oz each)
  • 1 leek, sliced (white and light green part only)
  • 1/4 cup chicken broth
  • 2 tablespoons real maple syrup
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons fresh thyme leaves
  • 1/2 teaspoon fine sea salt
  • 3/4 cup Cascadian Farm™ Farm Stand Harvest organic cherry, almond and quinoa granola
  • 2 tablespoons butter, melted
  • 1/3 cup shredded fresh Parmesan cheese
Instructions:
  • Preheat oven to 350°F. Heat oil in a 12-inch ovenproof skillet over medium-high heat. Cook sweet potatoes for 5 minutes, stirring occasionally to prevent sticking.
  • Add the leek and sauté for an additional 3 minutes, stirring often. Reduce the heat to medium.
  • In a small bowl, combine chicken broth, syrup, vinegar, 1 tablespoon of thyme leaves, and salt. Pour the mixture over the ingredients in the skillet. Cover and cook for 10 minutes, stirring gently occasionally.
  • In a separate small bowl, combine granola, melted butter, Parmesan cheese, and remaining 1 tablespoon thyme leaves. Sprinkle the granola mixture over the ingredients in the skillet. Bake in the oven without covering for 15 to 18 minutes, or until the granola mixture turns a light golden brown. Optionally, garnish with extra fresh thyme leaves.
