Savory Turkey Stroganoff

Creamy classic dish for picky eaters, from Prevention® Healthy Cooking.
Ingredients:
  • 1 tablespoon olive oil
  • 3/4 lb turkey cutlets, cut into thin strips
  • 2 large shallots, thinly sliced
  • 1 box (10 oz) cremini mushrooms, sliced
  • 1 cup baby carrots, sliced
  • 1 clove garlic, finely chopped
  • 1 teaspoon hot paprika
  • 1/4 teaspoon salt
  • 1 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
  • 2 teaspoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons cornstarch
  • 1/3 cup fat-free sour cream
Instructions:
  • Heat 2 teaspoons of oil in a large nonstick skillet over high heat. Cook and stir the turkey for 3 to 4 minutes until no longer pink and cooked through. Transfer to a plate.
  • Lower the heat to medium-high and pour in the remaining teaspoon of oil along with the shallots. Sauté for about a minute until the shallots start to soften. Introduce the mushrooms and carrots to the skillet, and cook for 4 minutes until the mushrooms become tender. Mix in the garlic, paprika, and salt, and stir for another minute. Take the skillet off the heat.
  • Combine chicken broth, tomato paste, Worcestershire sauce, and cornstarch in a small bowl until well mixed. Return skillet to medium heat and add the broth mixture. Stir frequently until the sauce thickens and comes to a boil. Simmer for 2 minutes, then add the turkey and cook for an additional minute until heated through. Remove skillet from heat and gently fold in the sour cream.
