Savory turkey sausage, nutrient-rich spinach, and hearty barley create a satisfying soup.
Ingredients:
  • 1 large onion, diced
  • 0.75 pound bulk turkey sausage
  • 1 clove garlic, crushed
  • 1 (32 fluid ounce) container chicken stock
  • 6 ounces frozen chopped spinach
  • 2 teaspoons kosher salt
  • ground black pepper to taste
  • 0.33333334326744 cup barley
Instructions:
  • In a large pot over medium heat, heat olive oil. Sauté onion until soft, about 5 minutes. Add turkey sausage and garlic, breaking the sausage into small pieces with a wooden spoon; cook until sausage is browned, about 5 minutes. Pour chicken stock into the pot. Stir in spinach and bring to a simmer. Season with kosher salt and black pepper. Boil the soup, then reduce heat to medium-low, and simmer for 20 minutes.
  • Mix the barley into the soup and simmer until the barley is tender, approximately 1 hour.
