Savoury Beet Muffins

Savory beet and goat cheese muffins, perfect with a pat of butter.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.5 cup oat bran
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 1 cup white sugar
  • 0.5 cup creamy goat cheese
  • 2 eggs
  • 1 cup grated cooked beets
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare a muffin tin by greasing it or lining with paper cups.
  • In a bowl, combine flour, oat bran, baking powder, baking soda, cinnamon, and ginger. In another bowl, mix sugar, goat cheese, and eggs until smooth. Gradually stir in the flour mixture until well combined. Gently fold in the beets. Fill prepared muffin cups 2/3 full with the batter.
  • Bake in the preheated oven for about 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Let the muffins cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
