Savoury carbonara slice recipe

Savoury zucchini slice with carbonara flavors, ideal for meal prepping lunch.
Ingredients:
  • 4 eggs
  • 2 egg yolks
  • 1 medium (about 250g) green zucchini, cut into noodles
  • 400g dried spaghetti pasta
  • 18.20 gm olive oil
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 400g bacon rashers, cut into strips
  • 70g (1 cup) finely grated parmesan
  • 375ml (1 1/2 cups) pouring cream
  • Fresh continental parsley leaves, to serve (optional)
Instructions:
  • Preheat your oven to 180C/160C and lightly grease a square 22cm (base measurement) cake pan. Transfer the zucchini to a large heatproof bowl.
  • Cook the spaghetti in a large saucepan of salted boiling water as per packet instructions until al dente. Drain the pasta over the bowl of zucchini. Let the zucchini sit for 1 minute, then drain and mix with the pasta.
  • In a large frying pan, heat oil until shimmering. Add onion, garlic, and bacon, then sauté over medium heat, stirring frequently, for about 5 minutes until the onion is tender. Mix this into the pasta blend and spread evenly at the bottom of the pan.
  • In a jug, mix together parmesan, eggs, egg yolks, and cream. Season the mixture. Pour evenly over the pan contents, gently pressing to distribute evenly.
  • Bake for 50-55 minutes or until golden and set. If desired, sprinkle with parsley before serving. Cover loosely with foil if overbrowning.
