Chorizo carbonara recipe

Upgrade your carbonara with spicy chorizo for a delicious twist on this classic pasta dish.
Ingredients:
  • 375g curly fettuccine
  • 2 chorizo sausages, finely chopped
  • 150g pea
  • 250ml thickened cream
  • 2 free-range eggs, lightly whisked
  • 4 free-range eggs yolks
  • 25g parmesan
Instructions:
  • Boil the pasta in a large saucepan of water as per package instructions until al dente, then drain thoroughly.
  • Heat a large frying pan over medium-high heat. Cook the chorizo, stirring occasionally, for 5 minutes until it turns golden brown.
  • Toss peas into the sizzling chorizo. Heat for 2 minutes until warm. Lower heat. Mix in the pasta and stir gently. Season to taste.
  • In a bowl, vigorously whisk together cream, egg, egg yolks, and half of the parmesan. Pour the mixture over the pasta and cook, continuously tossing, for 1-2 minutes until the sauce slightly thickens.
  • Portion out the pasta mixture evenly into serving bowls. Finish by sprinkling the remaining Parmesan cheese on top before serving.
