Creamy corn with a crunchy topping, perfect with roasted meats.
Ingredients:
  • 1 tablespoon butter or margarine
  • 1 small onion, finely chopped (1/4 cup)
  • 1/4 cup finely chopped green bell pepper
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground mustard
  • Dash of pepper
  • 2/3 cup milk
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 cup Country® corn flakes cereal
  • 1 tablespoon butter or margarine, melted
Instructions:
  • Preheat oven to 350°F. Melt 1 tablespoon of butter in a 10-inch skillet over medium heat. Saute onion and bell pepper for 4 to 6 minutes until tender, stirring occasionally.
  • Whisk together flour, salt, mustard and pepper. Cook for 1 to 2 minutes, continuously stirring until silky and fully combined; then remove from heat.
  • Add milk and stir gently. Heat the mixture until it boils, stirring constantly, then let it boil for 1 minute. Gently mix in the corn and transfer to an ungreased 1-quart casserole dish.
  • Combine cereal with a luscious tablespoon of butter in a small bowl, then generously sprinkle this delightful mixture over the corn. Bake without covering for 10 to 15 minutes, or until the dish is bubbling and the topping is gloriously golden brown.
