Scalloped potatoes

Ingredients:
  • 2 kg floury potatoes such as Maris Piper or Idaho
  • 30 g unsalted butter
  • 2 tablespoons plain flour
  • 500 ml semi-skimmed milk
  • 300 ml double cream
  • 75 g Cheddar cheese
  • 75 g Gruyère cheese
Instructions:
  • - Preheat the oven to 200°C/400°F/gas 6. Slice the potatoes into 3mm thick pieces, boil until tender, and drain. Place in a baking dish. - In a non-stick pan over medium heat, melt butter, add flour, then slowly whisk in milk and cream until thickened. Remove from heat, stir in most of the cheese, season with salt and pepper. - Pour the cheese sauce over the potatoes, top with remaining cheese, and bake for 45 minutes until golden and bubbling.
