Schnitzels with apple and kale slaw

Try crispy beef schnitzels with apple kale slaw for a simple weeknight dinner.
Ingredients:
  • Rice bran oil, to shallow fry
  • 2 pkts Beef Schnitzels
  • 350g Kaleslaw Kit
  • 1 Granny Smith apple, cored, cut into matchsticks
  • Lemon wedges, to serve
  • Flat-leaf parsley leaves, to serve
Instructions:
  • Heat a generous amount of oil in a large frying pan over medium-high heat. Cook half of the schnitzels for 2-3 minutes on each side until they are golden brown and cooked through. Transfer them to a plate lined with paper towel to drain excess oil. Repeat the process with the remaining schnitzels and then slice them thickly.
  • While waiting, get the kaleslaw kit ready by following the instructions on the packet. Mix in the apple.
  • Arrange the apple and kale slaw on serving plates, then add the beef schnitzels on top. Serve with fresh lemon wedges and parsley on the side.
