"Cardamom date spread: A healthier alternative to jam, perfect for topping fresh, warm scones."
Ingredients:
  • 300g (2 cups) self-raising flour
  • 15g butter
  • 36.00 gm sugar
  • 185ml (3/4 cup) reduced-fat milk
  • Extra reduced-fat milk, for brushing
  • 250g pitted dates, chopped
  • 150g dark brown sugar
  • 1/2 tsp cardamom seeds
  • 185ml (3/4 cup) water
Instructions:
  • In a medium saucepan, combine dates, sugar, cardamom, and water. Bring to a gentle boil over medium heat while stirring constantly. Lower the heat and simmer uncovered, stirring occasionally, for 10 minutes until the mixture thickens and becomes shiny. Transfer the spread to a clean 250ml (1-cup) glass jar with a screw-top lid and seal right away. Flip the jar upside down for 2 minutes to sterilize. Allow it to cool at room temperature or enjoy warm.
  • Preheat your oven to 220°C. In a medium bowl, sift the flour. Add butter and use your fingers to rub it in. Mix in sugar and create a well in the center. Pour in the milk and use a knife to blend until dough starts to form.
  • Gently mix mixture by hand until combined, then knead briefly on a floured surface until smooth. Pat dough to a thickness of 2.5cm, then use a floured 5cm cutter to make discs. Arrange on a baking tray with edges touching. Re-knead and cut any remaining dough. Brush the tops with a bit of milk.
  • Bake in a preheated oven for 14-15 minutes until golden and scones sound hollow when tapped. Enjoy warm with date spread.
