Vegan tofu scramble with spinach and cherry tomatoes for a healthy breakfast choice.
Ingredients:
  • 75g cherry tomatoes, halved
  • 1 garlic clove, crushed
  • 1/4 tsp ground turmeric
  • 100g firm tofu, crumbled
  • 40g baby spinach
  • 1/2 lime
  • 1/2 x 45g wholegrain wrap, cut into wedges
Instructions:
  • Drizzle olive oil in a non-stick pan and heat over medium-high heat. Add tomato, garlic, and turmeric. Sauté for 1 minute, stirring continuously.
  • Add cubes of silky tofu and fresh spinach leaves to the pan. Cook, gently stirring, for 2 minutes, allowing the spinach to just wilt. Season with your favorite spices and herbs. Squeeze a bit of zesty lime juice over the dish. Enjoy with warm wrap wedges.
