Protein-packed tofu scramble with tomatoes, green onion, and Cheddar cheese - a delightful egg-free breakfast for the whole family!
Ingredients:
  • 1 bunch green onions, chopped
  • 1 (14.5 ounce) can peeled and diced tomatoes with juice
  • 1 (12 ounce) package firm silken tofu, drained and mashed
  • ground turmeric to taste
  • salt and pepper to taste
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • In a skillet over medium heat, saute green onions in olive oil until tender. Add tomatoes with their juice and mashed tofu. Season with salt, pepper, and turmeric. Simmer until heated through, then sprinkle with Cheddar cheese before serving.
