Versatile Spinach Tofu Scramble: a nutritious meal any time of day. Customize with your favorite veggies for added protein and flavor!
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1/2 (about 1/2 cup) yellow onion, diced
  • 1 pound firm or extra firm tofu packed in water, drained well
  • 1 teaspoon nutritional yeast
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • 1/4 teaspoon ground turmeric
  • 4 cups loosely packed fresh spinach leaves
  • 1/4 teaspoon lemon juice
Instructions:
  • Caramelize the onion: Heat oil in a skillet until it shimmers, then sauté the onion until soft, which takes around 3 to 5 minutes. Stir occasionally.
  • Crumble drained tofu into bite-sized pieces over skillet, add nutritional yeast, salt, pepper, and turmeric. Stir to combine and cook until tofu is hot, about 3 minutes. Don't worry if it browns slightly.
  • Add the spinach to the pan and cook for 1 minute until wilted. Finish off with a squeeze of lemon juice and season with salt and pepper to taste. Store any leftovers in a tightly covered container in the fridge for up to four days (do not freeze).
