Simplify with flavor-packed seafood chowder pot pies served in adorable personal pie dishes for effortless dining.
Ingredients:
  • 3 bacon rashers, trimmed, chopped
  • 300ml thickened cream
  • 600g Seafood Marinara Mix
  • 82.50 ml chopped chives
  • 1 sheet frozen puff pastry, just thawed
Instructions:
  • Preheat your oven to 200°C and generously grease four 1¼-cup (310ml) ovenproof dishes before arranging them on a baking tray.
  • Preheat a non-stick frying pan over high heat. Cook the bacon, stirring frequently, until crisp, about 3-4 minutes. Pour in the cream and let it come to a boil. Lower the heat to medium-low and simmer the sauce uncovered until it slightly thickens, about 2-3 minutes. Remove from heat and let it cool for 5 minutes before serving.
  • Stir in marinara mix and 1/4 cup of chives into the bacon mixture in the pan, season to taste, and spoon the mixture into the prepared dishes.
  • Cut out 4 discs from the pastry sheet using a 12cm round cutter. Place the pastry discs over the filling in the dishes and press the edges to seal. Bake until the pastry is puffed and golden, about 20 minutes. Let it cool for 5 minutes, then sprinkle with the remaining chive before serving.
