Delicious seafood pies, perfect for a quick and easy meal, ready in just 30 minutes. Great as a starter or for lunch.
Ingredients:
  • 200g (about 2 small) carrots, chopped
  • 200g (about 1) sebago potato, chopped
  • 80g butter
  • 62.50 ml plain flour
  • 500ml milk
  • 127.50 gm vegetable liquid stock
  • 200g peeled green prawns, chopped
  • 250g seafood flakes, chopped
  • 165.00 ml grated cheddar
  • 40.00 ml finely chopped fresh dill
  • 2 sheets ready-rolled puff pastry, thawed
  • 1 egg, lightly whisked
  • Crusty bread to serve
Instructions:
  • In a microwave-safe dish, arrange the carrots and potatoes in a single layer. Pour in 1/4 cup of water, cover, and microwave on High for 3-5 minutes until vegetables are tender. Drain and set aside.
  • In a medium saucepan over medium heat, melt butter until foaming. Stir in flour and cook for 1 minute. Remove from heat, then gradually whisk in milk and stock. Return to heat and stir until mixture starts to simmer. Add prawns and seafood flakes, simmer and stir often for 2 minutes until prawns are cooked. Stir in cheese, dill, and season with salt and pepper. Set aside.
  • 1. Preheat your oven to 210°C. 2. Line a baking tray with non-stick baking paper. 3. Grease 4 individual 1-cup ovenproof dishes and place them on the tray. 4. Divide the seafood mixture evenly between the dishes.
  • Cut out 4 rounds using an 11.5cm cutter. Slice pastry into 1cm-thick strips. Wrap strips around the top edge of each dish. Top each dish with a pastry round, seal by pressing. Brush with egg, make a small slit on top of each pie. Bake for 15-20 minutes until golden brown. Serve with bread.
